Onion & Zucchini Fry

This is a really simple yet very tasty dish. 

Served over brown rice is makes a perfect meal.
Also goes really well with mixed beans, or lentils if you want to add a legume to accompany the meal.

Quick brown rice (well let's face it brown rice is never quick, but this explanation is quick!):
1 cup rice in a pot with 2 cups water. Bring to the boil, cover & simmer for 30 minutes.

For the onion & zucchini fry:

Chop one onion in half and then slice it long-ways.
Place in a frypan with NO oil and let fry for 5 minutes until onion turns brown. You will need to stir the onion pieces around so they can evenly brown. 
I love the smell of cooking onion :-)
Add a teaspoon minced garlic & half a teaspoon of chili.
Stir to combine.
Chop a large zucchini into half moons & add to the frypan. Put a lid on and allow the zucchini to cook through til soft - this will take 10-15 minutes. 

Top with dried oregano. Stir well. 
Serve over a bed of brown rice.
