No pastry Apple Pie

mmmmmmmmm, warm apple pie - best way to end a cold day :-)

To serve 2 large servings
You'll need:
2 apples
2 tablespoons raisins
1/4 cup oats

Chop the apples into quarters & then core then & peel them. Then slice the apple quarters into thin slices & layer them in a small baking dish that has a very shallow amount of water just lining the bottom of the dish to prevent sticking.
I find the 2 apples tend to layer about 3 pieces high in my baking dish that is about 20cm long.
Mix the raisins with the oats. Sprinkle the oat mixture on top of the apples. Push the raisins down as much as you can between the apple slices so that they don't burn.

In a large measuring jug mix together
1/4 cup soymilk
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1 tablespoon almond butter.

It take a few minutes for the almond butter to break down into small enough pieces that I don't have chunks throughout the 'sauce'.
Pour the 'sauce' on top of the apples & oats.
Bake in a 180C oven for 40 minutes hour until lightly golden brown & all the liquid has been absorbed.
The smell as it cooks is ~divine~.
